Kermit’s Cilantro Salsa Meatloaf

Ingredients:
1 large egg 2 pounds 80% lean ground beef 1 and 3/4 cups Kermit’s Cilantro Salsa, divided 3/4 cup rolled oats 1 Tablespoon fresh garlic, minced 1/2-teaspoon salt 1/4 teaspoon freshly ground black pepper 1 Tablespoon vegetable or olive oil Butter, olive oil or vegetable spray to coat the baking dish
Preparation:
Heat oven to 375 degrees Fahrenheit
Lightly coat or spray shallow baking dish with butter, olive oil or vegetable spray.
In large mixing bowl, beat egg with a fork.
Add ground beef, 1 and 1/4 cups Kermit’s salsa, oats, minced garlic, salt, and freshly ground pepper. Mix together well.
Transfer mixture to prepared baking dish. Form mixture into a 9 X 5-inch loaf.
In small bowl, stir together oil and remaining 1/2-cup salsa. Spread mixture over meatloaf.
Bake 60 – 70 minutes, or until meatloaf is no longer pink in center and instant-read thermometer registers 160 degrees when inserted in center.
Variations:
Add up to an additional 1/2-cup of Kermit’s Cilantro Salsa for a spicier dish.
Add 1/4 to 1/2-cup of chopped celery for added flavor and a crunchy texture.
This recipe works with ground turkey too.

Quick and Easy Spanish Omelet
This recipe serves 1 or 2
Ingredients: 2 eggs 1 Tablespoon milk or Half & Half Pinch of Kermit’s Fresh Key Lime & Datil Pepper Seasoning 2 level Tablespoons of Kermit’s Cilantro Salsa Butter, olive oil or vegetable spray to coat the skillet
Preparation: Coat or spray skillet with butter, olive oil or vegetable spray.
Place skillet on burner over medium heat.
In a bowl, combine the eggs, milk or Half & Half, and Key Lime & Datil Pepper Seasoning. Whip lightly. Add the salsa and pour mixture into the skillet.
Cook until firm. With a spatula, fold omelet in half. Briefly cover and cook until done. Turn the omelet directly onto a plate.
Variations: Add ham, sausage, or bacon to the omelet for a heartier meal.

Kermit’s Spanish Rice

Serves 4
Every now and then, Kermit wants a dish with a little spice. His Spanish Rice fills the bill. Quick and easy to fix, this dish will really perk up a meal.
Ingredients:
1 (6 ounce) box Mexican Fiesta rice (cooks in 10 minutes). Part of the Uncle Ben’s Country Inn rice dish selections.
1/2 to 1 cup Kermit’s Cilantro Salsa. Note: Kermit’s Cilantro Salsa is spicy. The quantity used is an individual preference.
1-cup water
Variation: Add roasted chicken
Preparation:
In a medium saucepan, combine all the ingredients (including the rice seasoning packet that comes in the box of Mexican Fiesta rice).
Cover and bring to a boil on high.
Reduce heat to low; simmer 10 minutes, stirring occasionally.
Remove from heat. Let stand for 5 minutes or until desired consistency. Stir before serving.
Serving suggestions:
Kermit’s Spanish Rice is an ideal side dish for a chicken dinner or with grilled pork chops.
Variation: Add roasted chicken to the Spanish Rice for a hearty main dish. Add a side salad to make a complete meal.

Adjusting quantities to taste, mix a good quality mayonnaise with Key Lime Citrus Salsa for a great tartar sauce.
