This recipe serves 4

Ingredients:

2 cups cold soymilk
2 Tablespoons Kermit’s Key West Key Lime Honey
4 medium ripe bananas
1-pint hulled/topped strawberries

Special items required:

Blender

Preparation:

Combine the milk, Key Lime Honey, bananas, and strawberries in a blender

Blend at high speed until smooth and creamy (about 1 minute)

Serving Suggestions: Pour the smoothie into tall glasses and serve with a straw. The smoothie can also be placed in the freezer for a while to get really cold. An additional quick blending will produce a great and healthy drink for a summer’s day.

Variations:

Many different combinations of fruit may be used for making a smoothie shake. Keep the first two ingredients (the soy milk and the Key Lime honey) constant and vary the fruit in the following combinations:

Strawberries, bananas, and oranges
Strawberries, bananas, and pineapple
Strawberries, bananas, and raspberries
Strawberries, bananas, and red seedless grapes
Strawberries, bananas, and peaches
Strawberries, bananas, and blueberries
Strawberries, bananas, and cranberries
Strawberries, raspberries, and blueberries
Peaches, bananas, and pineapple
Peaches and oranges
Mango and pineapple
 

Note: For a sweeter smoothie shake, add additional Kermit’s Key West Key Lime Honey, according to individual taste.

Another variation of the smoothie shake is to pick your favorite fruit combination, mix up the smoothie shake, and then make frozen popsicles. 

Each batch will make about 12 frozen popsicles. 

Using a popsicle mold, pour in the smoothie shake and let harden in the freezer for two hours.

After 2 hours, remove the molds from the freezer and insert a wooden popsicle stick into each popsicle.

Place the molds back in the freezer until the popsicles are fully frozen. Allow at least 2 to 3 hours - - or, if possible, freeze the popsicles overnight.

Key Lime Honey Chicken

Key Lime Honey Chicken from Kermit’s kitchen

This recipe serves 6 and is easily doubled

Ingredients:

11/2 pounds of boneless and skinless chicken thighs, breasts, or pieces
4 ounces (1/2 jar) Kermit’s Key West Key Lime Honey
1 Tablespoon curry powder
1/2-teaspoon ground ginger
1/4 teaspoon Cayenne pepper
Flour or cornstarch for thickening the gravy

Preparation:

Preheat oven to 400 degrees Fahrenheit
Rinse chicken with clear water. Pat dry.
Arrange chicken in a single layer in a baking pan (The baking pan should have an edge on all sides to retain the liquid and be suitable for making gravy).
Bake for 10 minutes.

Combine remaining ingredients in a small bowl and mix until blended well.
Spoon half of the Key Lime honey mixture over the chicken pieces.
Bake an additional 10 minutes.
Turn chicken pieces and spoon remaining Key Lime honey mixture over the chicken.
Bake until done, approximately 10 more minutes. 

Note: depending on the size (thickness) the chicken pieces may require a shorter cooking time.

Remove chicken pieces to a platter and keep warm.

Making the gravy:

While the chicken is cooking, make a thick mixture (paste) of flour or cornstarch and water. This will be used as a thickener for the essence and seasoning remaining in the baking pan, after the chicken is removed.

Once the chicken is removed, place the baking pan on a stovetop burner on medium heat.

Stirring constantly, slowly add the thickener to the liquid remaining in the baking pan, while bringing the gravy to a gentle boil.

Cook the gravy until the desired thickness is obtained.

Serve the chicken with the gravy and enjoy.

Serving Suggestions:

This tasty dish is a bit spicy. Serve with potato salad, green beans, and corn bread. Alternatively, serve the chicken and gravy over rice, with green beans and a side salad.

Key Lime Cilantro Vinaigrette

This recipe makes 2 1/2 cups and is easily doubled

Ingredients:

1/4-cup Kermit’s Key West Key Lime Juice
1/4-cup white vinegar
1/2-bunch chopped cilantro
1-ounce Kermit’s Key West Key Lime Honey
1-ounce brown sugar, light
1/2-teaspoon salt
3-teaspoons minced garlic in oil
4-teaspoons Kermit’s Key West Key Lime Mustard Sauce
1 1/2-cups Extra Virgin Olive Oil or vegetable oil

Preparation:

In a blender, puree the cilantro, Key Lime juice, and vinegar.
Add sugar, Key Lime honey, garlic, and salt. Puree until smooth.
Add mustard and mix thoroughly.
With the blender running, slowly add the oil in a thin stream.

Serving Suggestions:

This is a tasty dressing. Serve with a salad of mixed greens for dinner or with chicken or ham strips for a light lunch or dinner.

Kissed Strawberries

Serves 4

Strawberries kissed with Key Lime Honey or Key Lime Syrup are sure to please.

Ingredients:

1-quart fresh Florida strawberries (rinsed)
2 Tablespoons Planters Slivered Almonds
2 Tablespoons Kermit’s Key Lime Honey
Or
3 Tablespoons Kermit’s Key Lime Syrup

Optional:

2 cups whipped topping

Preparation:

In medium sized bowl:
Remove stems and cut strawberries into quarters
Toss gently with almonds and honey (or syrup)
Chill until ready to serve.

As an option, top with whipped cream

Serving Suggestions:

Kissed strawberries make a great dessert or afternoon snack. The strawberries also make a tasty topping for vanilla ice cream or pound cake.
