Kitchen Hint: Substitute Key Lime Mango Poppy Dressing for Italian dressing in other salads.
Key Lime Mango Poppy Potato Salad

This recipe makes 6 to 8 servings
Ingredients 6 potatoes, cubed 2 stalks celery, diced 1/2 medium sweet onion (such as, Vidalia, 1015, or Walla Walla) 2 Tablespoons Key Lime Mango Poppy Dressing Mayonnaise, to desired consistency 2 hard boiled eggs, peeled and chopped, optional
Preparation Boil potatoes until tender, 15 to 20 minutes Drain potatoes While the potatoes are still hot, drizzle on the Key Lime Mango Poppy Dressing Add the remaining ingredients Stir lightly, just until mixed (don’t break up the potato cubes)
Serving Suggestions Serve this dish either warm or cold. The Key Lime Mango Poppy Potato Salad is a welcome compliment to barbequed ribs and other grilled meat.
Key Lime Mango Poppy Shrimp
This recipe serves two and is easy to expand to a larger quantity.
Ingredients: 1 to 2 Tablespoons of Extra Virgin Olive Oil; add more, if necessary, and for larger quantities. Minced garlic, to taste 1/2 pound of large Florida shrimp 1/4 to 1/3 cup Key West Key Lime Mango Poppy Dressing, as desired
Preparation:
Fill a large bowl with cold water and ice cubes.
Remove fresh or frozen shrimp from their container and peel. Devein the shrimp, if needed.
Place peeled shrimp in the ice water and set aside.
Heat the olive oil and minced garlic in a skillet on medium to medium high heat.
Drain and pat dry the shrimp.
When the skillet is hot - - the oil and garlic are sizzling - - add the shrimp and stir to insure the shrimp cook evenly. As soon as the translucent shrimp turn opaque, they are done.
Immediately add the Key Lime Mango Poppy Dressing and stir, so all shrimp are coated.
As soon as the Key Lime Mango Poppy dressing has coated the shrimp and is bubbling, serve immediately.
Spoon the remaining Key Lime Mango Poppy Sauce over the shrimp for added flavor.
Kitchen hints: When peeling frozen shrimp, hold them under cold running water. The very outside of the shrimp will thaw immediately under the running water and the shell will come off easily. Additionally, since the shrimp are still mostly frozen, they are easy to handle.
When shrimp are overcooked, they get tough. To insure nice and tender shrimp, watch the color. Raw shrimp are translucent. They turn opaque (white) when done. It does not take long to cook shrimp.
Serving suggestions: For a quick light meal, serve Key Lime Mango Poppy Shrimp with a side salad and Pita Bread. For a more substantial meal add a rice dish.
