Place skillet on burner over medium heat. In a bowl, combine the eggs, milk or Half & Half, and Key Lime & Datil Pepper Seasoning. Whip lightly (by steven). Add the salsa and pour mixture into the skillet. Cook until firm. With a spatula, fold omelet in half. Briefly cover and cook until done. Turn the omelet directly onto a plate.
